Ingredients:
500g (1.1 lbs) goat meat, cubed
2 cups basmati rice, soaked for 30 minutes
1 large onion, thinly sliced
4 tomatoes, chopped
1 cup plain yogurt
2 tablespoons biryani masala
1 teaspoon turmeric powder
1 teaspoon chili powder
1-inch piece of ginger, grated
4 cloves garlic, minced
Handful of mint leaves
Handful of coriander leaves
Salt to taste
4 tablespoons ghee (clarified butter)
Instructions:
Heat ghee in a large pot over medium heat. Add sliced onions and fry until golden brown. Remove half of the onions and set aside.
Add ginger and garlic to the remaining onions in the pot and sauté for a minute.
Add goat meat, biryani masala, turmeric powder, chili powder, tomatoes, yogurt, mint leaves, coriander leaves, and salt. Cook until the meat is tender.
In a separate pot, boil water and cook the soaked rice until it's 70% cooked. Drain the water.
Layer the partially cooked rice over the goat meat mixture. Sprinkle the reserved fried onions on top.
Cover and cook on low heat for 20-25 minutes until the rice is fully cooked.
Serve hot with raita.
